  • Makes 4 servings
  • 2 lbs chicken wings, split at the joint, tips removed
  • Salt and freshly ground black pepper, to taste
  • 2 ripe mangoes, peeled and diced
  • 2 habanero peppers, seeds removed and finely chopped
  • 1/2 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup water
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 2 tablespoons vegetable oil
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top.
  2. Season the chicken wings with salt and pepper. Arrange them on the wire rack and bake for 35-40 minutes, turning halfway through, until they are golden and crispy.
  3. While the wings are baking, prepare the sauce. In a saucepan over medium heat, combine the diced mangoes, chopped habanero peppers, apple cider vinegar, brown sugar, minced garlic, grated ginger, and water. Bring the mixture to a simmer.
  4. Cook the sauce for about 15 minutes, stirring occasionally, until the mangoes are soft and the sauce has thickened.
  5. Remove the saucepan from heat and let it cool slightly. Then, blend the sauce until smooth using an immersion blender or a regular blender.
  6. Return the sauce to the saucepan and stir in the soy sauce and lime juice. Keep warm over low heat.
  7. In a large skillet, heat the vegetable oil over medium-high heat. Add the baked wings and toss them in the oil for about 2 minutes to crisp them up further.
  8. Pour the mango habanero sauce over the wings and toss to coat evenly. Cook for another 2-3 minutes until the wings are well glazed.
  9. Serve the Mango Habanero Wings hot, garnished with fresh cilantro if desired.
