  • 1/2 teaspoon paprika
  • 6 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, cumin, coriander, turmeric, and paprika. Stir and cook for another 2 minutes until fragrant.
